Peanut Satay Stir-Fry Recipe!

So I have been craving peanut satay since Taste of Edmonton. We had a peanut satay “chicken” skewer at Padmanadi and it left me with a craving for more. Joel and I decided to make a peanut satay sauce for ourselves and make a delicious stir-fry. This is definitely going to become a staple in our cooking from now on. It’s SO good! We sort of played it be ear so the measurements aren’t exact but feel free to add or take away depending on your preferences. Here is the recipe!!

Peanut Satay Stir-Fry

Stir-fry Ingredients:

– half an onion (diced)
– tsp of grated ginger
– 1 clove of garlic
– 1 green pepper
– 1 head of broccoli
– 2 large carrots
– 1 package of rice noodles
– 1 tsp sesame oil
– 2 chicken breasts (pre-cooked)
– green onion (for garnish)

Peanut Sauce Ingredients:

– 3/4 cup peanut butter
– 1/2 cup coconut milk
– 1 1/2 Tbsp water
– 2 Tbsp lime juice
– 1 1/2 Tbsp soy sauce
– 1 1/2 Tbsp Siracha (or more if you like more spice!)
– 1/2 Tbsp grated ginger
– 2 cloves garlic
– 1 tsp teriyaki sauce
– 1 tsp sesame oil

  1. Cook noodles according to packaging.
  2.  Meanwhile, add tsp of sesame oil to garlic, onion, and ginger. Fry until golden. Add in all other stir-fry ingredients and fry for 5 minutes (I like my veggies to still be crunchy).
  3. In a small pot, combine all sauce ingredients and heat on medium low for about 5 minutes.
  4. Combine noodles, vegetables, chicken and sauce.
  5.  Garnish with green onion and enjoy!!!

Let me know what you guys think! Hopefully all the amounts are (semi) accurate!! That’s what happens when you don’t follow a recipe and make it up yourself. 😉
